Description

This is proper Japanese matcha, selected for its balance of sweetness, body and smooth umami.

Grown in Kagoshima in southern Japan, this organic matcha comes from the first harvest of the season, when the young tea leaves are at their most delicate and flavourful.

 

The tea is predominantly produced from Saemidori, one of Japan’s most highly regarded tea cultivars. The plants are carefully shaded before harvest, encouraging the leaves to develop their characteristic deep green colour, natural sweetness and rich umami flavour.

 

The result is a beautifully smooth, full-bodied matcha with a clean finish and very little of the harsh or overly grassy character you can find in lower-quality matcha.

 

Why this matcha is special

Some matchas can disappear once milk is added, while others become overly bitter or grassy. This one has enough intensity and body to cut through milk while keeping its sweetness and smooth texture.  It makes a rich, velvety matcha latte, but it's equally good whisked simply with hot water.

Kagoshima is one of Japan's most important tea-growing regions. Its warm southern climate, volcanic soils and long history of tea production make it particularly well suited to producing high-quality Japanese green tea.

How to make it (Start with this as a guide then adjust variables one at a time to find your preference)

For a matcha latte, whisk 2g of matcha with around 70ml of water at around 60–80°C until smooth and lightly frothy, then add your choice of hot or iced milk. Use slightly cooler water for a softer, sweeter cup, or move towards 80°C for a fuller and more aromatic flavour.

 

No syrups needed. No hiding it behind milk. Just really good matcha.
