Description
This Thunguri coffee comes from the Thunguri Wet Mill in the Kirinyaga County in Kenya, which is renowned for producing some of the country's most exquisite coffees. Thunguri is part of the Kibirigwi Farmers Cooperative Society, which comprises over a thousand smallholder farmers who each cultivate coffee on their small plots of land. These farmers hand-pick only the ripest red cherries and deliver them to the factory on the same day.
The processing at Thunguri is a testament to the quality and care behind Kenyan coffee. The cherries are meticulously sorted by hand, pulped to remove the outer fruit, and then undergo a wet fermentation process. This is followed by an extensive washing and soaking in fresh water, a method that is believed to further develop the coffee's complex acidity and amino acids. Finally, the beans are dried on raised African beds under the sun for one to three weeks. This labor-intensive process, combined with the high-altitude growing conditions and nutrient-rich volcanic soil, is what gives this coffee its stunning flavor.

Most of our coffees are suitable for all brew methods. Some will shine more brewed certain ways but that is ultimatley down to your own personal preference. However you chose to brew your coffee always make sure your using fresh beans, weigh the amount of coffee your using, time your brew and weigh the yield of your coffee.
A guide for home double espresso could be to use 18.5g of coffee, and extract in 25-30 seconds for a yield of 35-40ml.
A guide for home filter coffee could be to use 19g of coffee, brewed in 3-4 minutes with a yield of 250ml of water.
Once you have these or any other starting point you can then experiment and adjust your recipe to acheive the taaste you want. For example, for a slightly strong cup use more coffee or try a lower yield amount.
