Description
From the lush highlands of San Fernando, Nueva Segovia, Nicaragua, this exceptional coffee comes from the El Felix plot at Finca El Bosque, grown by the renowned Peralta family at around 1,800 metres above sea level.
Known for their innovation and precision in processing, the Peraltas have once again delivered a coffee that beautifully captures the balance between tradition and experimentation.
This lot is Red Catuai, a varietal celebrated for its sweetness and clarity. It’s been naturally processed with an added twist, an extended anaerobic fermentation period of up to 72 hours in sealed tanks, followed by a careful 30-day drying on raised beds. The result is a cup that bursts with character yet remains impeccably clean.
Expect flavours of blackberry, red apple, and raisin, rounded out by a gentle prune sweetness and a bright, refreshing acidity. It’s a layered and expressive coffee that shines in both filter and pour-over brews, while also offering an intriguing espresso experience.
Nicaragua El Felix Plot Sweet & Funky
Most of our coffees are suitable for all brew methods. Some will shine more brewed certain ways but that is ultimatley down to your own personal preference. However you chose to brew your coffee always make sure your using fresh beans, weigh the amount of coffee your using, time your brew and weigh the yield of your coffee.
A guide for home double espresso could be to use 18.5g of coffee, and extract in 25-30 seconds for a yield of 35-40ml.
A guide for home filter coffee could be to use 19g of coffee, brewed in 3-4 minutes with a yield of 250ml of water.
Once you have these or any other starting point you can then experiment and adjust your recipe to acheive the taaste you want. For example, for a slightly strong cup use more coffee or try a lower yield amount.
