Description

From the heart of Colombia’s coffee region comes this exceptional Tabi micro lot, a variety renowned for its beautiful balance of sweetness, acidity, and depth. Grown in the lush hills surrounding Armenia, Quindío, this washed coffee reflects the dedication and craftsmanship that make this region one of the most celebrated in the world of specialty coffee.

 

Tabi, whose name means “good” in the indigenous Guambiano language, was developed by Colombia’s national coffee research centre (Cenicafé) as a cross between Typica, Bourbon, and Timor Hybrid. This careful breeding combines the refined sweetness and complexity of its heirloom parents with the natural disease resistance of Timor, allowing producers to cultivate healthier plants without sacrificing cup quality. The result is a variety that thrives at high altitudes and produces consistently clean, expressive coffees with distinctive character.

 

Each lot is hand-picked and washed using traditional Colombian methods, before being slowly dried to lock in clarity and sweetness. In the cup, you’ll find rich chocolate and caramel notes, lifted by a bright lime sparkle and a juicy apricot finish. It’s a layered, dynamic cup , comforting yet vibrant, that shines in filter brews and brings a unique twist to espresso.

  • Most of our coffees are suitable for all brew methods. Some will shine more brewed certain ways but that is ultimatley down to your own personal preference. However you chose to brew your coffee always make sure your using fresh beans, weigh the amount of coffee your using, time your brew and weigh the yield of your coffee. 

     

    A guide for home double espresso could be to use 18.5g of coffee, and extract in 25-30 seconds for a yield of 35-40ml.

     

    A guide for home filter coffee could be to use 19g of coffee, brewed in 3-4 minutes with a yield of 250ml of water. 

     

    Once you have these or any other starting point you can then experiment and adjust your recipe to acheive the taaste you want. For example, for a slightly strong cup use more coffee or try a lower yield amount.
